COS wine producer in Vittoria Sicily

COS Farm was founded in 1980 by three friends: Giambattista Cilia, Cirino Strano and Giusto Occhipinti. The acronym of their surnames (Cilia-Occhipinti-Strano) gives rise to the company name In 1980 they are the youngest wine producers in Italy.

They rent from Giuseppe Cilia, father of Giambattista, the old family winery and the adjacent sapling vineyard of 3.60.40 hectares, in the historic town of Bastonaca. On 5 October they harvest the first vintage which will produce 1,470 bottles.

COS thus begins its adventure that will lead it to carry out a radical restructuring of the Cerasuolo di Vittoria. The company follows the principles of biodynamic viticulture to help the vineyard find and maintain balance in harmony with nature and to make the wine express the depth of the character of its soils.

For winemaking, he begins to use terracotta containers, a material that does not yield any aromatic characteristics. This is how Pithos was born in 2000, a Cerasuolo di Vittoria fermented and aged entirely in amphorae. After the restoration work on the Fontane building, the headquarters were moved in 2003. 2005 will be the year of the first Controlled and Guaranteed Denomination of Origin harvest, unique in Sicily.

The 2007 harvest in the new premises inaugurates the cellar and will mark another chapter in the history of this company. The small wooden barrels will definitively give way to the 150 amphorae, one of the most capacious of its kind. Today Cos is synonymous with Cerasuolo di Vittoria but also with rigor and quality.

To this company, to the intuition of these three friends, we owe the rebirth of the Vittoria area and its extraordinary wines.
